We attended a room with about 100 people, and were given a sheet of paper with about 15 questions on; for example 'someone who has been on TV', 'someone who has been to Italy', and we had to go around the room finding names of people who have done the task (basically they're just trying to see how you are when dealing with new people). It then consisted of a group task, where we had to assemble a landmark with spaghetti, tape, and string; again, they were looking out for how competent you are in a group. Finally there was a questionnaire testing your knowledge of bar work (types of wines, what is challenge 25 etc.) and then 1 by 1 they pulled us aside and put us behind a bar while an interviewer posed as a customer to see how we functioned.
