De-escalate though active listening, figure out the issue, apologize for their bad experience with staff or product, work with the customer to offer a solution that works for both of you. (maybe offer replacement meat with correct cooking instructions - often people buy the wrong cut for the method they will be cooking, grilling, braising, etc.

I handle an upset customer by providing them enjoyment. Different types of facilities like one wine free and maney others.
