Local Sourdough Bakery

My experience as an apprentice baker at Proof has been incredibly enriching, especially considering my initial limited knowledge of industrial kitchens and the art of sourdough baking. The opportunity to learn essential skills, such as operating both the rack and deck ovens, as well as mastering the art of laminating dough and shaping an array of pastries, has greatly enhanced my baking capabilities. The supportive and friendly atmosphere among the staff fostered a sense of camaraderie that made learning enjoyable. Additionally, my time spent at the bakery and farmers markets allowed me to engage with the local community, sharing insights into the owners' "old world" approach to sourdough baking. Overall, working at Proof has not only developed my technical skills but also deepened my appreciation for the craft of sourdough baking.

Cons

Working at Proof Bread has provided a unique experience in a rapidly evolving environment typical of small businesses. The initial focus on my apprenticeship and a learning-oriented atmosphere shifted towards a more intensive role, requiring myself and others to juggle multiple responsibilities, such as baking and managing the front of house (FOH). While the transition to a dual-role has been challenging, effective time management and communication among staff have been crucial in adapting to these changes. Although my original apprenticeship structure may not have been fully realized due to the bakery's transitional state, the opportunity to develop skills in both the bakehouse and FOH has been valuable. Typical shifts begin at 4am and can last up to ten hours, though management offers an early leave time based on task completion. This is nice if you are wanting to leave early but not so great if you need your full hours. Starting pay for apprentices is around $15 per hour. Overall, while the evolving nature of the work presents challenges, the experience has fostered resilience and adaptability.

I too find it valuable to learn things from multiple angles. Someone who sells bread will definitely appreciate it for what it is if they also baked it. Someone who bakes bread may appreciate the impact of their own hard work in front of a hot oven when they see a community member walk away moved with happiness. Thank you for calling out the challenges surrounding communication. We are still working on this. Our communication tools are getting better, but more importantly we are getting clearer about delivering communications in all directions within the company. It may still be an issue for awhile, but we should continue to see improvement. Thank you for all the efforts you made during your time at Proof!

A people company

Pros

Proof is a fast growing bakery that has loads of appeal to people. They have a great product that people love. All of the people that work there tend to be genuine people that care about their work and their craft. The owners are supportive and are always looking for ways to improve. They actively listen to their employees and try to make the best decisions for the employees and the company. They are growing very fast and there are growing pains to come with it. Just a few years ago, this business was in a garage and now they're in three different cities. All of that was made possible with great customers, amazing employees, flexible owners and a dedication to the craft of making exceptional bread and pastries.

Cons

Things can be disorganized at times, this happens in businesses that are growing as quickly as Proof is.

Thank you for taking the time to review your experience at Proof! I love how passionate our staff is about making amazing bread and pastries. You're totally right that growth has led to a lot of growing pains, and that we are still finding our bearings when facing them. It was one thing to communicate to a small team in a home garage, and a completely different challenge communicating with over 50 team members. This feedback is echoed amongst our staff. About a year ago we switched the platform that we used to communicate to one that was better suited for handling multiple topics all at once. However, there is a lot more improvement that we need to make. Right now we are working through some new communication requirements for ownership and management which will improve employee awareness and participation in company wide initiatives and changes. I do expect that we will always have to work to improve communication, but now more than ever we need to work diligently in this area. Additionally, as owners we have decided to get more involved in hiring and orientation despite having multiple locations. We are realizing that we are missing out on some very important moments in new hire orientation that can lead to better communication dynamics between us and our team.
