You get asked some basic questions and then are supposed to remember every sub and all of the ingredients for each sub on the menu. After they give you the study sheet you come back and write the entire menu down including sub ingredients. If you miss more than 3 you won't get the job, but if you can do this you will pretty much be guaranteed the job.
