Someone is going to sit you down and pretend that they know more about restaurants than you do. Do not believe this person. They are lying. They need you more than you need them. Keep this in mind while they are sizing you up, but don't let the confidence bleed into your body language. They will pick up on this immediately and start to feel jealous, which will negatively impact your odds of hire. Compliment something mundane, like the color of their shirt or their shade of lipstick. By the time you are done with your compliment, if you haven't been promoted to a part-time manager, you messed this up. Wait until tomorrow when half of the staff has likely turned over, and try again.
