Met with the Creative Director and discussed the challenges of closing an existing restaurant, executing a complete remodel, and generating income throughout the process by operating a pop up style bistro and continuing with the hotel's Room Service program. Also, how would one go about hiring an entirely new staff and retain them through planning, training, and coaching.
