Pros

- They provide thorough training so you're well prepared - The restaurants are consistently busy in the on-season (May-September)

Cons

- They do require an in-depth test prior to your start & continue to quiz servers, so you must be prepared to answer any questions about menu items, cocktails, SOPs, etc. - The off-season is significantly slower. Your assigned section (as well as pure luck) significantly impacts how much $ you take home each shift.
