Pros

2- 10 minutes breaks if you are fortunate. The few minutes between batches of inmate trustees in which you, the “supervisor” can gather your bearings.

Cons

Clear purses, no cellphones permitted in facility, smartwatches are also prohibited. You will see the most disturbing example of institutional corruption (or grooming) between female staff and inmates. Be prepared to be ostracized for standing by the rules and codes set forth by the FDA and USDA. On paper, everything is stellar, personally check the levels and the temps. The only things copacetic are the sanitizer solution and the temperature of the walk in coolers. The hot food holding temps are too low and the freezer temp is too warm. Black mold, food debris, and whatever is growing in the dishwasher (fungus, bacteria, alien life) along with mold behind the metal panels in wash bay are exasperating. The inmates act like divas. They have the female staff wrapped around their fingers. Don’t bother reporting the lack of “upper management’s professionalism to HR, they will not protect the reporting employee from retaliation. Imagine high school all over again with middle aged bullies; incredibly incompetent with all aspects of food code. Add in the most humorous display of lack of intellect, the use of compound sentences composed of only expletives. To further illustrate this mentally unhealthy, dangerous work environment, YOU are undermined by management, treated with little to no respect and talked to like a scorned child. If you are looking for a management position in food service, apply at an actual restaurant. Do not apply here.
