This is by far the worst place I have ever worked. I don’t even know where to start.. first off, the micromanaging by management is insane. They will be in your section bothering your tables and messing up your flow all night, coming up to you non stop throughout your shift asking about your tables and not letting you work. They also preach teamwork, but the managers will not help you, only yell at you to do something while you’re extremely busy/in the weeds. IF they do so much as bring water to your table, you will hear about it for days about how you need to be better. - The tip out is ridiculous, you tip out 24% of your sales in total, 8% to bussers, 8% to food runners, 8% to bar. This wouldn’t be such a problem if we had someone running our food and bussing our tables for us, but at Truffles the servers are required to bus EVERYTHING at the table except for a singular glass a customer is using. Therefor the busser picks up a couple glasses at most and wipes down your table. You’re also required to run basically all your food, but again still give the food 8%. More than half the time, bussers and food runners make more than the servers which is why I say if you do want to work here (don’t recommend) be a busser or food runner bc you will make just as much/ more and do about a quarter of the work of the servers. Servers are required to tell management of any issues big or small a table has, along with complaints. They will then give into anything the customers say and will comp the whole meal and give them free food on top of it, they do not care if that results in you not getting a tip, they will give into ANYTHING a customer says and you do not matter. Regulars have learned this, and will take advantage by saying stuff like “this key lime pie wasn’t as good as it normally was” and will get 2 free pies. The customers of this restaurant are 75% regulars that are retired extremely entitled people with money, another reason not to work here alone. Favoritism is huge here, and they don’t care about even attempting to make things fair. If you’re not one of the 3 favorites, you will get small sections while the same 3 servers will get all the parties and make 4x what you make. They will give one server 50 covers, while another has 15. If you think experience or a good attitude will make you a favorite- wrong. Management decides who they like and who they don’t and they stick with it. Another thing to note, 99% of the servers here are 18-20 years old, if that shows anything… do not come here as an experienced server like I did and except anything. If I haven’t proved it enough, the restaurant does not care about their employees or their money and sometimes you will work a 10 hour shift with no break, and there is no rush to cut you or relive you bc the company doesn’t pay the servers ($2.13/hr). They constantly have 8-10 servers on even on slow season, even on a Tuesday lunch shift. Therefore you will end up standing around for hours waiting your turn for a table bc there’s 10 servers waiting. You would think management would put less servers on on days/ times of the year you know it will be slow, but no. They have absolutely no respect for your time. The amount of opening, closing, and running side work is insane as well. Oh and to top it off, one server and one bartender closes the entire restaurant by themselves. Managers waltz out of the restaurant an hour before closing time, and the closing server can stay up to 3 hours past closing (midnight) and you won’t even get minimum wage during the closing hours when you’re not receiving tips (which I think is illegal). Oh well does the closing server at least get a free meal? Think again. They used to offer a free kids meal or soup for closers (under $10 which is offensive) but they took that away. The managers have created the most toxic work place environment, they are all extremely passive aggressive and belittling. I could go on for hours and write pages on pages about how horrible this place is but I’ve spent too much time on this review. If you have any respect for yourself, do not work here.
