High turnover rate for staff and management. I saw a fellow bartender get asked to stay late for a party and was then fired on the spot when her shift was done. It was pre-planned. Additionally, due to the tip cut ratio, the servers made dramatically more money than the bartenders. When I tell other bartenders that I used to work at Gilt Bar, they refer to it as a "meat grinder."
