Often worked late into the night (latest 1:30 or 2 AM) but this varied each shift. If I were to guess, I'd say it averaged around midnight. After closing, the other employees such as waiters got to go home besides chef, sous-chef, and food runners who stayed to do chores. Even though closed on Sundays, Saturday night would tend to go latest into the night and roll over into Sunday morning. One could only leave after chores and cleaning were completed (no one had a set chore, unfortunately, but all had to be completed, which didn't help when some people would rather talk than do chores to leave). Being in the bright lights all day also made it harder to sleep at night, easily throwing off one's sleep schedule, not a good idea if you have commitments outside of work. Never got a pay stub or told how to access one. Also felt like I was in a sexist environment. As a female, I was asked by a co-worker to smile and felt that sexist stereotypes ran rampant with expectations around certain tasks for only the men to do them. This further left me questioning whether the pay was equal too.
